Mexican Coleslaw

Mexican Coleslaw.
Fresh, quick, delicious lunch.
1 package coleslaw mix
1/2 can black beans drained and rinsed
1 cup frozen corn, thawed
1/2 cup chopped red onion
2 Tbs chopped jalapenos
2 Tbs dried cranberries. Garlic Salt
Cumin
Cayenne Pepper
Mexican Oregano
Dressing:
1 Tbs honey (or maple syrup if vegan)
1/4 olive oil
1 tsp ACV
Juice of 1/2 orange
Orange zest
Tapatio (a couple shakes)

Mix together salad ingredients. Mix dressing together in a bowl with a fork. Pour over coleslaw. Mix together. Serve with tortilla chips. Extra- precooked shrimp, sprinkle taco seasoning over and squeeze fresh orange juice, mix together and add to slaw.

Today, I had a page of coleslaw mix in my fridge that needed to be used. I am trying to avoid going to the store so it was a “what’s in the pantry” challenge. This quarantine feels like a continual episode of Chopped. I did not have lime but the fresh orange really made this light and refreshing with the spice and jalapenos. The cranberries added a nice pop that really played well off the other flavors. It made a delicious, light lunch to enjoy in the AZ sunshine. You can keep it vegan or add some shrimp for a more filling meal.

Friday Favorites- TJ finds and Lipstain

This week I picked two amazing finds at Trader Joes. First was the Freeze Dried Grape Slices. Impulse buy after a long busy day and stopped for some snacks. So glad I grabbed them. I loved them so much, I had to go back for a second bag! They are literally like delicious little candies with a hint of crunch. Totally recommend for keeping on hand for lumches or a snack when out and about.

The second was Miyoko’s vegan cream cheese. I keep reading how amazing this is but at $5.50 a container I have been reluctant to pick it. I wish I had sooner. Very clean ingredients and very delicious. I used it in mashed potatoes. I did a swipe on a beyond burger, of course on a piece of toast with fresh basil. The options are endless. Highly recommended keeping this gem on hand.

My next fav came in my Ipsy bag last month. It is a lipstain and gloss by the Balm Jour. It goes on as a gloss and leaves behind a very natural looking pink stain. Perfect for wearing when I teach fitness classes and want to look pulled together and naturally fresh, not made-up.

Chocolate Almond Tofu Pudding

Here is a little chocolate treat to help you celebrate Valentine’s Day or any day you need a chocolate celebration. Protein packed, low sugar and low carb. A rich, decadent, satisfying treat.

Chocolate Almond Tofu Pudding
1 8oz pkg. cubed firm tofu
2 tbsp. cocoa powder
3 tbsp. almond butter
2 tbsp. Enjoy Life Chocolate Chips (or chocolate chips of choice)
4 tbsp. Maple syrup
2 stevia packets (optional)
1 tbsp.  chia seed
1 tsp cinnamon
1 1/2 tbsp. of nut milk or half & half (if needed)
Put all ingredients in a blender or food processor (I use the Ninja Master Prep)
and blend until smooth, add milk or half n half if needed if mixture is too thick. Chill in the refrigerator for 30 min or longer. Serve Cold
